Homemade Ferrero Rocher Chocolate Balls

Best Homemade Ferrero Rocher Chocolate Balls (or Hazelnut Truffles) which are a perfect dessert recipe sweetened only with honey for the holidays or any other time of the year.

Ingredients

  • 5 oz hazelnuts (roasted)
  • 2.5 tablespoon raw cocoa powder
  • 4 tablespoon honey
  • ½ teaspoon vanilla extract
  • ½ teaspoon salt

Coating

  • 1 cup baking chocolate to be melted
  • 1 cup chopped hazelnuts

Instructions

  • Roast the hazelnuts for 15 mins at 180°C / 360°F
  • Once roasted, allow to cool and peel off the skin by rubbing them between your palms or in a towel.
  • Blend into hazelnut meal
  • Add the cocoa, sweetener, vanilla and salt and mix until smooth
  • Shape the balls and place a hazelnut in the middler of each one.
  • Place in the fridge for 1 hour.
  • After the hour, melt chocolate and quickly take each ball, dip in chocolate and then roll into chopped hazelnuts and let cool.
  • Storage - keep in airtight container up to a week or in freezer up to 3 months.

Notes

  1. Healthier version is without the melted chocolate coating in the end 
  2. For smaller children make them without the hazelnut in the middle as nuts are a choking hazard
  3. Natural sweetener substitues can be agave syrup, date syrup or maple syrup.
