5 oz hazelnuts (roasted) 2.5 tablespoon raw cocoa powder 4 tablespoon honey ½ teaspoon vanilla extract ½ teaspoon salt Coating 1 cup baking chocolate to be melted 1 cup chopped hazelnuts
Roast the hazelnuts for 15 mins at 180°C / 360°F
Once roasted, allow to cool and peel off the skin by rubbing them between your palms or in a towel.
Blend into hazelnut meal
Add the cocoa, sweetener, vanilla and salt and mix until smooth
Shape the balls and place a hazelnut in the middler of each one.
Place in the fridge for 1 hour.
After the hour, melt chocolate and quickly take each ball, dip in chocolate and then roll into chopped hazelnuts and let cool.
Storage - keep in airtight container up to a week or in freezer up to 3 months.
Healthier version is without the melted chocolate coating in the end
For smaller children make them without the hazelnut in the middle as nuts are a choking hazard
Natural sweetener substitues can be agave syrup, date syrup or maple syrup.
