Easy Chocolate Marble Muffins Recipe

Ingredients

Dry Ingredients

  • 1 ¾ cups all purpose flour
  • 2 teaspoon baking powder
  • 2 tablespoon raw cocoa powder
  • 2 tablespoon chia seeds optional
  • pinch salt

Wet Ingredients

  • 4 tablespoon coconut oil
  • 1 cup coconut milk
  • 1 banana overripe
  • 4 tablespoon agave syrup optional

Instructions

  • Preheat the oven to 180°C / 360°F.
  • Line a muffin tin with muffin liners. 
  • Mash the banana with a fork.
  • Transfer the mashed banana into a medium bowl and add the rest of the wet ingredients. Mix well. 
  • In a separate small bowl, mix all the dry ingredients except the cocoa powder. 
  • Join the wet and dry ingredients together. You can do this either with a whisk, hand mixer or a stand-alone mixer at low speed. 
  • Remove two thirds of the mixture into one bowl and add the raw cocoa powder to the remaining one third.
  • Fill the muffin cups to about ⅔ with the white batter. 
  • Add the chocolate batter on top of each muffin and mix with the end of a spoon so you get a nice swirl (don't worry if it is not perfect).
  • Bake for about 18-20 minutes, depending on your oven. 
  • Remove from the muffin molds from the muffin tin and allow to cool on a wire rack.
