Best Sheet-Pan Vegan Tofu Fajitas

Packed with protein-packed tofu, a medley of colorful vegetables, and a homemade fajita seasoning, these vegan tofu fajitas are not only a feast for your taste buds but also a healthy addition to your weeknight dinners.

Ingredients

  • 13 oz firm tofu
  • 2 peppers red and green
  • 1 red onion
  • 2 garlic cloves chopped
  • 4 oz vegan cheese grated
  • 6 tortillas wholewheat
  • 1 tbsp cornstarch for crispier tofu, optional

Fajita Seasoning

  • 2 tablespoon smoked paprika
  • 1½  tablespoon ground coriander
  • teaspoon ground cumin
  • tsp mild ground chili powder
  • garlic cloves chopped
  • 3½  tablespoon olive oil
  • 3 tablespoon lime juice
  • ½ teaspoon salt

Homemade Salsa for Fajitas

  • 3 tomatoes
  • 1 garlic clove finely chopped
  • ½ red onion
  • 2 tbsp lime juice
  • ¼ cup coriander leaves finely chopped
  • salt and pepper to taste
  • splash apple cider vinegar

Easy Homemade Guacamole

  • 1 ripe avocado
  • ½ onion
  • 1 small garlic clove
  • 1 tbsp lime juice
  • salt and pepper to taste

Other toppings

  • vegan cheese
  • vegan sour cream
  • fresh cilantro
  • lime wedges

Instructions

  • Preheat the oven to 180°C / 360°F.
  • Cut the tofu into long strips, about 1 inch thick (if you want crispier tofu coat it in 1 tablespoon of cornstarch).
  • Slice the peppers and onions into slivers.
  • Place the tofu and the vegetables in a large bowl and season with the fajita seasoning.
  • Place on a baking sheet and roast for 25 minutes.
  • Make the salsa by chopping up all the ingredients into small pieces and mixing them thoroughly.
  • Make the guacamole by peeling the avocado, chopping all the ingredients into tiny pieces and mixing them thoroughly.
  • Once finished remove from the oven. While the oven is still hot place the tortillas in to warm up for a couple minutes. 
  • On each tortilla add a bit of salsa, guacamole, vegan sour cream, peppers, onion, tofu, top with some vegan cheese and roll into a fajita.
