Easy Red Pancakes

  • 1 cup oats
  • 1 banana
  • 2 eggs
  • 1 medium beet
  • 2 tbsp water


  • Cut the ends of the beet and peel the skin.
  • Place all the ingredients in a blender and blend.
  • Preheat a pan to medium heat and add a little coconut oil.
  • Pour about 2 tablespoons of batter to the pan and cook for several minutes, or until small bubbles start appearing on the surface.
  • Flip the pancake over and cook for 1-2 minutes until finished.


Store in airtight container in the fridge for up to 3 days.
