Ingredients

Shortbread layer

Caramel layer

  • ½ cup peanut butter smooth
  • cup honey
  • ¼ cup coconut oil melted
  • pinch salt

Chocolate layer

  • 2 tbsp coconut cream
  • 75 g dark chocolate
  • cup coconut oil

Instructions

  • Line a muffin tin with muffin cups.

Shortbread layer

  • Mix all the ingredients for the shortbread layer.
  • Line the bottom of the muffin cups with the shortbread layer. Firmly press and put into the fridge for 30 minutes.

Caramel layer

  • Mix all the caramel ingredients together and spread over the shortbread layer.
  • Put into the fridge for at least an hour.

Chocolate layer

  • Heat the coconut cream over medium heat until it fully melts.
  • Meanwhile melt the dark chocolate in the oven or over a water bath.
  • Add the melted chocolate and coconut oil to the melted coconut cream and mix.
  • Pour over the caramel layer.
  • Leave in the fridge for a couple of hours until the cups are firm.
  • Remove from the muffin tin and serve.
