- 2 cups broccoli florets
- ½ cup shredded cheese gouda or cheddar
- 2 eggs
- ½ cup whole wheat flour
- 1 garlic cloves
- ½ teaspoon salt
- ¼ teaspoon pepper
- olive oil for cooking
Cut the broccoli florets into small pieces or alternatively pulse them in a blender.
In a large bowl, combine all the ingredients together and stir to combine.
Heat about 2 tablespoons of olive oil in the skillet.
Scoop about 2 tablespoons of the batter and put into the skillet in a round circle. Flatten with a silicone spatula.
Cook for about 2 - 3 minutes and then flip.
Continue cooking the other side for another 2 - 3 minutes.
Continue until you have used up the whole batter.
Top tips:
- Don't overcrowd the skillet. About 3 patties is enough for one round of cooking in a regular-sized skillet.
- You can add more oil in between the cooking batches.
