Broccoli Cheese Patties (Suitable For Kids)

Ingredients

  • 2 cups broccoli florets
  • ½ cup shredded cheese gouda or cheddar
  • 2 eggs
  • ½ cup whole wheat flour
  • 1 garlic cloves
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • olive oil for cooking

Instructions

  • Cut the broccoli florets into small pieces or alternatively pulse them in a blender.
  • In a large bowl, combine all the ingredients together and stir to combine.
  • Heat about 2 tablespoons of olive oil in the skillet.
  • Scoop about 2 tablespoons of the batter and put into the skillet in a round circle. Flatten with a silicone spatula.
  • Cook for about 2 - 3 minutes and then flip.
  • Continue cooking the other side for another 2 - 3 minutes.
  • Continue until you have used up the whole batter.

Notes

Top tips: 
  1. Don't overcrowd the skillet. About 3 patties is enough for one round of cooking in a regular-sized skillet. 
  2. You can add more oil in between the cooking batches.
