Easy And Healthy Baked Oatmeal With Chocolate Chips

Ingredients

Dry Ingredients

  • 1 cup oats rolled, quick oats, quick-cooking oats
  • ½ teaspoon baking powder
  • ½ teaspoon cinnamon optional
  • ¼ cup dark chocolate chips
  • pinch salt

Wet Ingredients

  • 1 egg free-range or organic
  • 1 cup milk dairy or non-dairy milk
  • 2 bananas overripe, mashed
  • 2 tablespoon coconut oil melted
  • 1 tablespoon honey optional
  • 1 teaspoon vanilla extract optional

Instructions

  • Preheat the oven to 180 degrees Celsius / 350 degrees Fahrenheit. Gently grease an 5x7 inch inches (13 x 18 centimeters) pan or line with parchment paper.
  • Mix all the wet ingredients together in a large mixing bowl. 
  • In a separate bowl, combine all the dry ingredients except the chocolate chips. 
  • Now add the dry ingredients to the wet ingredients and mix gently with a silicone spatula or a whisk. 
  • Gently add the chocolate chips and fold into the oatmeal batter. Leave a few chocolate chips to add on top.  
  • Pour into the pan and even the surface with your spatula and add the remaining chocolate chips. 
  •  Bake for about 35 minutes.  
  • Once baked, allow to cool in the pan.
  • Slice once cooled and serve.
