Easy Vegan Chickpea Patties Recipe

These easy and vegan chickpea patties are your crispy and nutritious healthier alternative to the regular burgers.

For Chickpea Fritters

  • 1 can chickpeas (or 1 ½ cup cooked) drained
  • ½ onion
  • 1 carrot
  • 1 garlic clove
  • 1 tablespoon parsley fresh
  • ¼ cup whole wheat flour
  • ½ teaspoon salt
  • 2 tablespoon water

For Baking

  • 1 cup breadcrumbs
  • 2 tbsp olive oil

Instructions

  • Drain the chickpeas (if using canned chickpeas), place them in a large bowl and mash chickpeas with a potato masher. For instructions on how to make this recipe using a food processor see notes.
  • Peel the carrot (if not organic) and grate it. 
  • Chop the onion and garlic. 
  • Add all the ingredients for the chickpea fritters (except the water) and mix together.
  • Now add a tablespoon by tablespoon of water until you have a mixture that holds well.
  • Scoop the amount of the mixture based on the size of the patties you want and form patties. 
  • Coat each patty into breadcrumbs (optional). 
  • Now heat a large skillet over medium heat and add olive oil. You can also use a cooking spray.  
  • Place patties onto the skillet and fry for about 2-3 minutes. 
  • Turn around and continue frying for another 2-3 minutes. 
  • Once baked, remove from the skillet and place on a paper towel to drain a bit before serving. 

Notes

If making in a food processor then first put the grater attachment and grate the carrot, then use the chopping attachment and chop the onion and garlic and then add the chickpeas and rest of the ingredients except water. And then follow the same method as above.
