Ingredients

Dry Ingredients

  • 1 cup almond flour
  • ½ cup coconut sugar
  • 1 teaspoon baking powder
  • pinch salt

Wet Ingredients

  • ½ cup peanut butter
  • 1 egg

Instructions

  • Preheat the oven to 180C/350F.
  • Line a baking tray with parchment paper.
  • In a large mixing bowl, combine all the dry ingredients (almond flour, coconut sugar, baking powder and salt) and mix.
  • Add the wet ingredients (egg and peanut butter) to the dry ingredients and combine until you have a smooth batter. You can also do this with an electric mixer. 
  • Take scoops the size of one tablespoon and form balls with your hands.
  • Put each cookie dough ball on a lined baking sheet and gently press.
  • Bake the cookies for about 10-12 minutes (depending on the strength of your oven) until the edges turn golden brown.
  • Transfer to a plate or cooling rack and allow to cool down for about 5-10 minutes before serving.
