In a large mixing bowl, combine all the dry ingredients (almond flour, coconut sugar, baking powder and salt) and mix.
Add the wet ingredients (egg and peanut butter) to the dry ingredients and combine until you have a smooth batter. You can also do this with an electric mixer.
Take scoops the size of one tablespoon and form balls with your hands.
Put each cookie dough ball on a lined baking sheet and gently press.
Bake the cookies for about 10-12 minutes (depending on the strength of your oven) until the edges turn golden brown.
Transfer to a plate or cooling rack and allow to cool down for about 5-10 minutes before serving.
