This healthy easy oven roasted zucchini slices are made in just 15 minutes in the oven and with simple ingredients you have at home - olive oil, garlic powder, lemon juice, parmesan cheese salt and pepper and zucchinis.
Wash the zucchinis and remove any excess moisture with a paper towel. Cut the stem and slice the zucchini in ¼ inch (½ cm) thickness.
Place the sliced zucchini in a large mixing bowl, add half of the cheese and the rest of the ingredients and mix thoroughly.
Place on a baking sheet (with out without parchment paper) in an even layer. Sprinkle each zucchini slice with the rest of the parmesan cheese and place in the oven.
Remove after about 7 minutes or when you see that the cheese is bubbly and crisp and golden brown.
Serve these delicious seasoned zucchini slices as a snack or easy side dish recipe. They are delicious at room temperature also.
Notes
If you are using small zucchini your roasting time may be shorter than if using large zucchini. We use medium zucchinis, about 4 inch wide (2 cm).
