Oven Roasted Zucchini Slices with Parmesan

This healthy easy oven roasted zucchini slices are made in just 15 minutes in the oven and with simple ingredients you have at home - olive oil, garlic powder, lemon juice, parmesan cheese  salt and pepper and zucchinis.

Ingredients

  • 3 medium zucchinis
  • 1 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • tsp garlic powder
  • 1 tbsp lemon juice
  • ½ cup shredded parmesan cheese

Instructions

  • Preheat oven to 450°F / 225 °C. 
  • Wash the zucchinis and remove any excess moisture with a paper towel. Cut the stem and slice the zucchini in ¼ inch (½ cm) thickness. 
  • Place the sliced zucchini in a large mixing bowl, add half of the cheese and the rest of the ingredients and mix thoroughly. 
  • Place on a baking sheet (with out without parchment paper) in an even layer. Sprinkle each zucchini slice with the rest of the parmesan cheese and place in the oven. 
  • Remove after about 7 minutes or when you see that the cheese is bubbly and crisp and golden brown. 
  • Serve these delicious seasoned zucchini slices as a snack or easy side dish recipe. They are delicious at room temperature also. 

Notes

  • If you are using small zucchini your roasting time may be shorter than if using large zucchini. We use medium zucchinis, about 4 inch wide (2 cm). 
  • can replace zucchini with yellow squash
