Easy Oven Roasted Zucchini Slices with Parmesan

This healthy easy oven roasted zucchini slices are made in just 15 minutes in the oven and with simple ingredients you have at home - olive oil, garlic powder, lemon juice, parmesan cheese  salt and pepper and zucchinis.

Ingredients

Zucchini is a summer squash first domesticated in Mesoamerica 7000 years ago but later on bred in Italy in the 19th century. Today it is eaten all around the world but is especially a staple of the Mediterranean diet. That is why we created a recipe that is tasty, refreshing and healthy. 

  • Fresh zucchini (courgettes) - pick organic if you can. Fresh zucchinis are firm to the touch
  • Olive oil - high in heart healthy monosaturated fats and the oil we use in most of our recipes. We never use vegetable oil, just olive oil. 
  • Parmesan cheese - has a distinctive taste. Its saltiness and cheesiness help the zucchini crisp up while giving it a delicious flavor
  • Garlic powder - easier and faster to use than fresh garlic and more easily mixed in with the zucchini. 
  • Lemon juice - gives the recipe that little bit of acidity it needs. Also is high in vitamin C 
  • Sea salt/ black pepper - need to bring the flavors out. If making for baby then just put some of the sliced zucchini aside and don't salt. You can use kosher salt, himalayan salt or any other you have on hand.

How to bake zucchini in oven? Step-by-step instructions

To make the sliced zucchini delicious we roast it at a high temperature for a short time - 7 minutes. This makes them crispy on the outside and soft on the inside. This we find is the best way for cooking zucchinis. 

  1. Preheat oven to 450°F / 225 °C. 
  2. Wash the zucchinis and remove any excess moisture with a paper towel. Cut the stem and slice the zucchini in ¼ inch (½ cm) thickness. 
  3. Place the sliced zucchini in a large mixing bowl, add half of the cheese and the rest of the ingredients and mix thoroughly. 
  4. Place on a baking sheet (with out without parchment paper) in an even layer. Sprinkle each zucchini slice with the rest of the parmesan cheese and place in the oven. 
  5. Remove after about 7 minutes or when you see that the cheese is bubbly and crisp and golden brown. 
  6. Serve these delicious seasoned zucchini slices as a snack or easy side dish recipe. They are delicious at room temperature also. 

Tip: If you are using small zucchini your roasting time may be shorter than if using large zucchini. We use medium zucchinis, about 4 inch wide (2 cm).

Substitutions

  • cheese - you can use any other variety, including dairy-free cheese
  • yellow squash - can be used instead of zucchini. They pretty much taste the sam

Variations

  • Spicy - add chili pepper flakes while cooking to imbue heat into the dish
  • Herbs - you can add Italian herbs for a more herby dish or any of your favorite herbs
  • Bread crumbs - in the large mixing bowl coat the sliced zucchini with breadcrumbs to get an even crispier dish 

Storage

  • store in airtight container in the fridge for up to 3 days 
  • reheat in oven at 350°F / 170 °C for 10 minutes or in the microwave
  • does not freeze well

FAQ

Do you peel zucchini?

Zucchini does not need to be peeled, just washed and dried. However, if you wish you can peel it.

Can babies eat this?

Do not add salt to the recipe if making for babies. Once roasted cut the zucchini slices in 4 pieces so they can easily grab them. This recipe is suitable for babies once they are able to use their pincer grasp.

Is this a recipe for gluten-free zucchini slice?

Yes, this oven roasted zucchini recipe uses parmesan cheese, olive oil, salt, pepper, garlic powder and lemon juice so it is gluten-free.
