3-Ingredient Homemade Vegan Sweet Potato Tortillas
A great way to add nutritionally rich sweet potatoes to your diet is by making these homemade sweet potato tortillas with just 3 ingredients.

- 1.1 lb sweet potatoes purple or orange
- 2 cups flour wheat, whole wheat, oat flour
- 1 teaspoon salt
Preheat the oven to 200℃/380℉ and line a baking tray with parchment paper.
Cut the sweet potatoes lengthwise.
Pierce the sweet potato skin with a fork a few times.
Place the sweet potatoes with the cut side down on the parchment paper and bake in the oven for about 30 minutes.
Once the sweet potatoes are baked, remove from the oven and allow to cool for about 30 minutes.
Now scoop the sweet potato flesh and put into a mixing bowl.
Add the flour and salt and mix with your hands until you have a firm dough ball.
Cut into 8 identical pieces of dough.
Roll out each piece of dough into a thin round circle.
Heat a skillet over medium heat.
Bake each tortilla on the skillet for about 2 - 3 minutes.
Flip with a silicone spatula and continue to bake for another 1 - 2 minutes.
Allow to cool.
Top tip: Place some parchment paper between the tortillas once cooked to prevent them from sticking to each other.
