3-Ingredient Homemade Vegan Sweet Potato Tortillas

A great way to add nutritionally rich sweet potatoes to your diet is by making these homemade sweet potato tortillas with just 3 ingredients.

Ingredients

  • 1.1 lb sweet potatoes purple or orange
  • 2 cups flour wheat, whole wheat, oat flour
  • 1 teaspoon salt

Instructions

  • Preheat the oven to 200℃/380℉ and line a baking tray with parchment paper.
  • Cut the sweet potatoes lengthwise.
  • Pierce the sweet potato skin with a fork a few times.
  • Place the sweet potatoes with the cut side down on the parchment paper and bake in the oven for about 30 minutes.
  • Once the sweet potatoes are baked, remove from the oven and allow to cool for about 30 minutes.
  • Now scoop the sweet potato flesh and put into a mixing bowl.
  • Add the flour and salt and mix with your hands until you have a firm dough ball.
  • Cut into 8 identical pieces of dough.
  • Roll out each piece of dough into a thin round circle.
  • Heat a skillet over medium heat.
  • Bake each tortilla on the skillet for about 2 - 3 minutes.
  • Flip with a silicone spatula and continue to bake for another 1 - 2 minutes.
  • Allow to cool.

Notes

Top tip: Place some parchment paper between the tortillas once cooked to prevent them from sticking to each other.
