These 3-Ingredient Homemade Vegan Sweet Potato Tortillas are not only vegan but incredibly easy to make with just three simple ingredients. They are a great way to add nutritionally rich sweet potatoes to your diet.

Sweet Potato Tortillas Ingredients

To make these baked sweet potato tortillas, you will need the following ingredients:

  • Sweet Potatoes: You'll need a bunch of sweet potatoes for this recipe. You can use regular sweet potatoes or add a twist with purple sweet potatoes and have really cool looking purple tortillas.
  • Flour: Opt for 1 ½ cups of your preferred flour. Whether it's wheat, whole wheat, or even oat flour, the choice is yours.
  • Salt: A little salt goes a long way in enhancing the flavor of these tortillas.

How To Make Your Own Tortillas - Step by Step Instructions

To make your own tortillas, just follow these steps for an amazing final result:

  1. Preheat the oven to 200℃/380℉ and line a baking tray with parchment paper.
  2. Cut the sweet potatoes lengthwise.
  3. Pierce the sweet potato skin with a fork a few times.
  4. Place the sweet potatoes with the cut side down on the parchment paper and bake in the oven for about 30 minutes.
  5. Once the sweet potatoes are baked, remove from the oven and allow to cool for about 30 minutes.
  6. Now scoop the sweet potato flesh and put into a mixing bowl.
  7. Add the flour and salt and mix with your hands until you have a firm dough ball.
  8. Cut into 8 identical pieces of dough.
  9. Roll out each piece of dough into a thin round circle.
  10. Heat a skillet over medium heat.
  11. Bake each tortilla on the skillet for about 2 - 3 minutes.
  12. Flip with a silicone spatula and continue to bake for another 1 - 2 minutes.
  13. Allow to cool.

Place some parchment paper between the tortillas once cooked to prevent them from sticking to each other.
