Healthy Grilled Chicken Spinach Wrap

A healthy grilled chicken spinach wrap is one of our favorite recipes - made with simple ingredients, you can have it ready to eat in 15 minutes.

Why we love this spinach chicken wrap recipe?

  • can be made with freshly grilled chicken or you can use rotisserie chicken, leftover chicken, chicken thighs or even chicken from chicken soup 
  • make it low carb and nutrient rich using a spinach tortilla
  • made with nutritious vegetables such as red onion, tomatoes and cucumber 
  • great way to meal prep 
  • great as an easy lunch or even a quick dinner meal 
  • ingredients can be separated so you only have to cook once but can feed a whole family of picky eaters

Ingredients

  • Grilled chicken - can use any leftover chicken or rotisserie chicken you have. We made fresh grilled chicken breast using olive oil, dried oregano, smoked paprika, lemon juice and salt. 
  • Red onion 
  • Few tomato slices 
  • Few cucumber slivers
  • Fresh spinach 
  • All wrapped in a spinach tortilla or a flour tortilla 
  • Dressing to top it off made from ingredients you have at home - olive oil, crushed garlic clove, lemon juice and dijon mustard

How to make spinach chicken wraps?

For the grilled chicken

  1. Cut the chicken breast into ½ inch thickness and about 1 ½ inches in length. 
  2. Place the skinless chicken breasts in a large bowl and add the spices - olive oil, smoked paprika, oregano, salt and lemon juice and mix so all of the chicken is seasoned. 
  3. Heat a grill pan on medium-high heat with a tablespoon of olive oil. 
  4. Add the chicken breast and grill for about 5 minutes per side (or when you cut through the thickest piece it is white and cooked through). 
  5. Remove from the grill pan onto a plate. 

For the dressing

  1. Use a garlic crusher to crush the garlic and place in a small bowl or cup. 
  2. Add the olive oil, lemon juice, dijon mustard and mix with a spoon. 

For the wrap assembly

  1. Take your spinach or flour wrap and place it on a plate. 
  2. Use a teaspoon to spread the dressing on the bottom of the wrap. 
  3. Add the grilled skinless chicken breasts. 
  4. Top with a few cucumber slices, tomato slices, 3-4 pieces of red onion and fresh spinach. 
  5. Use a teaspoon to drizzle more dressing on top and some black pepper. 
  6. Fold and enjoy your delicious chicken wrap with spinach.

Variations

You can make this an even more delicious wrap by adding any of the following

  • slices of mozzarella cheese
  • feta cheese 
  • crumbled goat's cheese
  • bell pepper 
  • avocado
  • chilli flakes
  • sriracha 

You can also add the ingredients to our high protein red lentil wrap.

FAQ

Can I use leftover chicken or any other meat?

This recipe works best with grilled chicken but you can use leftover chicken or any other meat you have one hand. Best is to warm the meat up beforehand so you have a delicious wrap that is warm.

Is a grilled chicken wrap good for you?

This healthy grilled chicken wrap uses only whole foods, is made with a variety of vegetables and has a base of a spinach wrap. It is high in protein and has a variety of vitamins and minerals.

Ingredients

Grilled Chicken

  • 1 lb skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp dried smoked paprika
  • 1 tsp dried oregano
  • 1 tbsp lemon juice
  • ½ tsp salt

For the dressing

  • 4 tbsp olive oil
  • 2 crushed garlic cloves
  • 4 tbsp lemon juice
  • 1½ tbsp dijon mustard

For the spinach chicken wrap assembly

  • ½ cucumber halved lengthways and sliced thinly
  • 1 tomato halved lengthways and sliced thinly
  • ½ cup spinach
  • ¼ red onion sliced thinly
  • pinch black pepper

Instructions
 

Grilled Chicken
