Baked Vegan Easy Lentil Patties Recipe

These vegan baked lentil patties are a great alternative to meat for any main meal or a delicious after school snack for kids.

Ingredients

  • 1 can red lentils or ½ cup cooked
  • ½ onion
  • 1 carrot
  • 1 garlic clove
  • 1 tablespoon fresh parsley
  • 1 cup whole wheat flour
  • ½ teaspoon salt
  • 2 tablespoon water

Instructions

  • Preheat the oven to 180 C/350 F.
  • Grate the carrot.
  • In the food processor put the blender attachment. Add the carrot, onion and garlic and chop.
  • Place the lentils and the rest of the ingredients (except the breadcrumbs) and mix until you have a compact mixture.
  • Using a cookie scoop or a regular tablespoon (1-2 tablespoons) scoop the amount of the mixture based on the size of the patties you want and form patties. 
  • Coat each lentil patty into breadcrumbs by placing the breadcrumbs on a plate and then coat each side of the patty. 
  • Take a baking sheet and brush it with olive oil.  
  • Place the patties on the baking sheet.
  • Bake in the oven for 30 minutes, turning them after 20 minutes.
