In the food processor put the blender attachment. Add the carrot, onion and garlic and chop.
Place the lentils and the rest of the ingredients (except the breadcrumbs) and mix until you have a compact mixture.
Using a cookie scoop or a regular tablespoon (1-2 tablespoons) scoop the amount of the mixture based on the size of the patties you want and form patties.
Coat each lentil patty into breadcrumbs by placing the breadcrumbs on a plate and then coat each side of the patty.
Take a baking sheet and brush it with olive oil.
Place the patties on the baking sheet.
Bake in the oven for 30 minutes, turning them after 20 minutes.
