Why We Love These Vegan Lentil Patties

I've tried with chickpea patties, and that has turned out to be a success so to mix things up a bit, I decided to give it a go with some lentils. We love these because:

  • Veggie-based recipes are always a great way to include more vegetables in my kid's diet.
  • Using whole foods and simple pantry ingredients
  • Pleasant on the eye so that my kids actually want to eat it.
  • Good way to add some plant-based protein to the diet

Ingredients

To make these simple lentil patties recipe, you will need the following ingredients:

  • Red lentils: you can use either canned lentils for this recipe or you can cook your own. If cooking your own lentils, ½ cup of lentils should be sufficient to equal one can of canned ones. I like to use red lentils, but you can also use green lentils or brown lentils.
  • Flour: I usually use whole grain flour (whole wheat flour) for patties, but you can pretty much use any purpose flour of choice or even some chickpea flour or oat flour.
  • Carrots: I highly recommend you use organic carrots. That way you can leave the skin on as it contains the most nutrients.
  • Onion: it's best to use a regular red onion, but you can also use yellow onion or even onion powder.
  • Garlic: a garlic clove adds to the whole aroma and taste of this recipe but if you don't have one, just add some garlic powder.
  • Parsley: if you have fresh parsley, I highly encourage you to use it because the aroma it brings is just amazing. But in case you don't have any dried parsley will also do.
  • Olive oil: I use olive oil for frying the patties, but you can also bake them on butter, ghee butter or another plant-based oil.
  • Bread crumbs: to ensure a crispy texture of the vegan patties, I like to coat them in breadcrumbs prior to baking but this can be skipped if you don't like adding bread crumbs
  • Seasoning (optional): sometimes seasoning them can be too intense for some people so I've put it as optional, but adding fresh herbs, Italian seasoning, spice mixture or black pepper is a great way to enhance the flavor profile of your delicious burgers

Storing Your Vegan Lentil Cakes

In case you have yourself some leftover veggie patties, you can always store them for later. Here a few easy ways to do so:

  • refrigerator: store them in an airtight container for up to three days.
  • freezer: freezer them individually on a piece of parchment paper and then transfer to a silicone bag where you can keep them in the freezer for about 3 months.

Top tip: make double the amount and freeze raw, unbaked vegan lentil patties in the freezer. When you want to enjoy them just take them out and bake on a skillet, in the oven or in an air fryer.

FAQ

Are Lentil Patties Gluten-Free?

They can definitely be gluten-free if you use a gluten-free flour. Just substitute the amount of the whole wheat flour in this recipe with a gluten-free one and you have yourself some delicious vegan gluten-free lentil patties.

Do I Need to Soak the Lentils Before Cooking?

No. While it is advisable to soak the lentils and remove the antinutrients that they can contain that can cause bloating, from a cooking perspective, you don't need to presoak the dry lentils before cooking.
