Easy Buckwheat Bread

What is Buckwheat 

Contrary to popular belief, buckwheat is not actually a grain. It's a fruit seed related to rhubarb. However due to its nutrient profile and texture it is often used as a grain for culinary purposes. And buckwheat bread being one of those. 

Buckwheat Benefits 

Buckwheat contains powerful antioxidants that can protect the body from harmful agents. It is also a good source of some essential minerals like manganese but more importantly, its consumption is linked to lowered risk of developing high cholesterol. So a great health and heart supporting ingredient that you'd want to include in your nutrition. 

Buckwheat Bread 

I've found one of the easiest ways to include buckwheat into your nutrition (and especially your child's nutrition) is in the form of buckwheat bread. 

People often avoid making homemade bread due to their beliefs it's complicated and requires time but really it can be very simple. And the result amazing!

A buckwheat bread recipe can be made with or without yeast as well as with or without gluten. It really depends on the texture you want in the end and how intense you want to taste the buckwheat. 

This recipe uses both dry yeast and wholegrain spelt flour (so not gluten-free) but these can easily be substituted to your liking. 

Ingredients

A great buckwheat bread recipe includes the following ingredients: 

  • flour: solely buckwheat flour or combined with other flours such as all purpose flour. You can easily make homemade buckwheat flour by placing buckwheat in a food processor and processing until you get a fine flour. 
  • a rising agent: active dry yeast, baking powder or baking soda + sugar 
  • fat: butter or olive oil 
  • warm liquid: milk or water 
  • salt 

If you're using a gluten flour alongside buckwheat flour like we are, then you want to mix all of the ingredients for quite some time - between 5 and 10 minutes - to allow for the gluten to form. That way you will have a smooth and elastic dough that will easily rise before baking. 

How To Make Buckwheat Bread? Step by Step

  1. Preheat the oven at 180 Celsius / 356 Fahrenheit for 30 minutes. 
  2. Mix all the ingredients except the water together in a large mixing bowl.  
  3. Add the water and mix for about 5 - 10 minutes until you have a smooth and elastic bread dough. You can do this in a Kitchen aid with a paddle attachment (or an equivalent mixer).
  4. Transfer into a loaf pan (either oil the loaf pan a bit or use parchment paper).
  5. Take a silicone brush and rub over the top of the bread and sprinkle some sesame of sunflower seeds.
  6. Place into oven for 30 minutes. You will know that it is done when the top of the bread is browning and you stick a knife through and it comes out dry. 

​Tip: if you cut it while it is warm the crust will break (but also be delicious) so if you want to slice it into perfect slices wait until it cools down.

Substitutions

The great thing about buckwheat bread and breads in general is that most of the ingredients can be easily substituted to accommodate your liking or simply the type of ingredients you have at home. 

  • Wheat flour - you don't need to combine buckwheat flour with wheat flour when making buckwheat bread. You can use solely buckwheat flour and make it a gluten-free bread or add another type of flour such as rice or oat flour. But since they don't contain gluten the buckwheat bread will probably not be as soft or fluffy as the one containing gluten would be.
  • Active dry yeast - yeast is a rising agent that I like to use in self-rising recipes due to it's simplicity. But you can use baking soda or baking powder as well with a teaspoon of apple cider vinegar to make it rise. 
  • Water - to give some extra protein and fat to the buckwheat bread, you can use milk instead of water for the liquid component.  

Variations

If you want to think outside of the box when making your delicious buckwheat bread, there are quite a few variations and add-ins you can try: 

  • Seeds: add some pumpkin or sunflower seeds within the dough but also sprinkle on top before baking 
  • Nuts: for some extra fat and flavor, you can add some ground walnuts to the flour

Equipment

To make this simple and rather quick homemade bread, you really need 2 things. Apart from the oven that is. But even those 2 are not mandatory. 

A stand-alone mixer - I love my kitchen aid mixer and honestly don't know how I would function without it. But if you don't have one a hand mixer will do. Or you can simply knead the dough with your hands. Old-school! 

Loaf pan - we love this glass Pyrex because it is non-toxic. But really any other baking tray will work or you can just form the bread with your hands and put on a regular oven baking tray. 

How to store buckwheat bread 

Buckwheat bread can be stored in an airtight container on room temperature for about 3 days or in the refrigerator for up to 7 days. 

Baked buckwheat bread can also be frozen and stored in the freezer for up to 6 months.

Top Tips 

Allow your buckwheat bread to fully cool before slicing up and serving. And for slicing make sure to use a serrated knife to keep the bread's form and prevent it from smushing. 

FAQ

Can I use cold water instead of warm?

No, the warm liquid allows for the yeast to rise in combination with the sugar. So even if you are substituting the water for milk the milk needs to be warm when adding to the rest of the ingredients.

Can I add yogurt instead of water or milk?

I recommend to add yogurt only in cases when you are using baking soda. Baking soda needs a sour agent to rise which yogurt does contain. But the texture of the bread will not be as smooth and fluffy as with water or milk.

How to reheat a frozen buckwheat bread?

I find it the easiest and most natural to remove from the freezer and let it thaw for a couple of hours at room temperature. But I do realize it might not always be the most convenient so you can also put it in the oven at about 150 Celsius / 300 Fahrenheit for 30 minutes to thaw.
