These gluten-free banana buckwheat waffles are a perfect and wholesome way to start your day. Or finish it as a nutritious dessert!
Banana and buckwheat are one of my favorite combinations for making sweet treats. And what easier way to combine them than to blend all the ingredients together, put to baking and enjoy in less than 10 minutes of your time?
Whether you are looking for an easy breakfast (we also love our fluffy gluten-free Buckwheat Pancakes) or a comforting snack or dessert, these banana flavor waffles will soon come at the top of your list for the whole family to enjoy.
However, you will need a good non-stick waffle maker for the perfect fluffy buckwheat waffles so make sure you are not forgetting that!

Buckwheat Banana Waffles Ingredients
To make these whole wheat waffles, you will need the following simple ingredients:
- Buckwheat flour: I just love how the buckwheat flour gives a great aroma to these waffles but if you don't quite like the intensive taste, you can always substitute the buckwheat flour with another type of flour such as whole wheat flour or purpose flour. However then they won't be gluten-free.
- Baking powder: you need a pinch of baking powder to help the waffles rise but if you don't have any you can use baking soda as well.
- Coconut sugar: this is my usual sweetener of choice, but you can choose to omit it as you already have an overripe banana or you can use another sweetener, even a liquid one such as a little maple syrup or agave syrup.
- Coconut oil: coconut oil really is a great addition to these soft waffles as it not only adds some coconut aroma but also provides some healthy fats.
- Egg: one egg is what you need for this banana waffle recipe, and I suggest you use a free-range or organic one.
- Greek yogurt: I love using Greek yogurt for baking because its thickness gives the batter that extra thickness for best results. If you don't have any Greek yogurt, you can of course use regular yogurt as well.
- Flaxseed: I like adding flaxseed when baking because it thickens the batter a bit but also is a great source of fiber and nutrients.
- Almonds: a little more healthy fats, energy and aroma for your healthy waffles. You can replace them with other nuts such as hazelnuts.
How To Make This Banana Waffle Recipe Step by Step:
To make this easy banana waffle recipe, just follow these simple steps:
1. Mash your ripe banana with a fork.
2. Put all the ingredients (including the banana) into a high-speed blender.
3. Blend until you get a batter-like consistency.
4. Add bits of the batter into the waffle iron (depending on the size) and bake for about 5 - 6 minutes. The time will depend on your waffle iron.
5. Allow to slightly cool and serve with additions of choice.
Top tip: make a double batch and store for later so that on busy mornings when you are out of time you can just reheat while getting ready for your day!
Buckwheat Banana Waffles Serving Ideas:
- Serve with some nut butters such as almond butter or peanut butter. This really gives an amazing nutty flavor to these banana buckwheat waffles
- Add some chocolate chips to the waffle batter prior to baking and after blending.
- Serve with some fresh fruit (seasonal if possible)
- Add some ice cream to your fluffy waffles.
- Spread some homemade jam on top of your banana waffles.
- Serve with some heavy coconut cream for a tropical taste of your buckwheat banana waffles.
How To Store Buckwheat Banana Waffles
In case you have yourself some leftover waffles, here are a few ways to store them:
- In an airtight container in the refrigerator for up to 5 days
- In a silicone bag in the freezer for up to 3 months (remember to freeze individually first before stacking in the freezer)
To thaw/reheat the buckwheat banana waffles, you can do that at room temperature, in a warm oven or a microwave on a defrost option.
FAQ
I wouldn't suggest using flours that don't have much carbohydrates (such as almond flour) because you will not get fluffy waffles that you would probably expect. Whole grains and flours such as white rice flour or brown rice flour and even raw buckwheat groats would be a better option here.
You most definitely can make a vegan version! Instead of the Greek yogurt use some plant-based milk and instead of the egg you can add a flax egg. Just mix a tablespoon of flaxseed with 3 tablespoons of water and leave for 5 minutes to assemble before adding to the ingredients and blending for your perfect banana waffle recipe.
I haven't tried making this recipe in anything other than a waffle maker so I wouldn't know but if you do try let us know in comments how it works out!
