Blender Banana Buckwheat Gluten-Free Waffles

These gluten-free banana buckwheat waffles are a perfect and wholesome way to start your day. Or finish it as a nutritious dessert!

Ingredients

  • 1 ½ cup buckwheat flour
  • 1 tsp baking powder
  • cup almonds
  • 1 tablespoon flaxseed
  • 2 tablespoon coconut sugar
  • 1 banana overripe
  • 1 egg
  • ½ cup Greek yogurt
  • ½ cup water
  • 1 tablespoon coconut oil

Instructions

  • Mash your ripe banana with a fork. 
  • Put all the ingredients (including the banana) into a high-speed blender. 
  • Blend until you get a batter-like consistency. 
  • Add bits of the batter into the waffle iron (depending on the size) and bake for about 5 - 6 minutes. The time will depend on your waffle iron. 
  • Allow to slightly cool and serve with additions of choice.

Notes

Top tip: make a double batch and store for later so that on busy mornings when you are out of time you can just reheat while getting ready for your day!
