What Are Croffles?
If the name of this recipe took you a bit by surprise, don't worry. You're not the only one. After cronuts which are a combination of a croissant and a donut and cruffins - a mix between a croissant and a muffin, here comes the Croffle! Originally from South Korea, the croffle is also known as croissant waffles. So as you can imagine, it is a combination of a croissant and a waffle. Even though it might sound complicated to make such a combination, a croffle is really just a form of putting unbaked croissants in a waffle maker. And you have yourself a croffle!
Homemade Croffles
The easiest way to make homemade croffles is to buy some store-bought croissant dough or even frozen mini croissants. You can probably find those in your local bakery or supermarket.
However, we really try to avoid any processed and store-bought foods so here we bring you a simple recipe for puff pastry dough that you can make at home, roll into a croissant and stick into a waffle iron. For the perfect homemade croffle!
Ingredient List For Your Perfect Croffles
For this easy croffle recipe, you will need the following ingredients:
- all-purpose flour: I like to use all-purpose white flour when making puff pastry but it can also turn out pretty good with a whole wheat one
- dry yeast: dry yeast helps the flour rise
- brown sugar: the sugar gives the sweetness to the puff pastry but also helps the yeast activate
- milk: for a nice and stretchy dough use some milk which is also necessary to activate the yeast
- salt: in almost all baked recipes, a little bit of salt is necessary to enhance the taste
- butter: cold butter is required for those croissant layers to form

How To Make Croffle Puff Pastry - Step-by-Step
1. Put all the ingredients EXCEPT the butter into a large mixer bowl and mix until you all ingredients have combined. About 3 - 4 minutes should be enough.
2. Add the butter and continue mixing for a longer period of time (about 10 minutes) until the dough is smooth and elastic.
3. Allow the dough to proof for about half an hour.
4. Roll the dough with a rolling pin into a 12 x 20 inches rectangle shape (approx. 35 to 55 cm).
5. Cover the dough with cling film and place in the refrigerator for about an hour.
6. While the dough is cooling, take the butter cut it into smaller pieces and place on a baking sheet. Covering with another piece of baking sheet and roll with a rolling pin until the butter is a smaller rectangle shape compared to the dough (8 x 12 inches).
7. Place the butter into the freezer.
8. Once the butter is frozen, take both the butter and the dough out of the freezer/refrigerator and place on a floured surface. Place the butter in the middle of the dough and fold the dough over the butter but make sure that the sides of the dough don't touch. Place in the freezer for another 30 minutes.
9. Take out the dough and roll with a rolling pin into a rectangle shape. This time in a separate direction than the previous rectangle shape. Fold the dough to the middle like you did the first time and then in half. Place again in the freezer for another 30 minutes.
10. Take the dough out again and roll with a rolling pin into another rectangle shape. Now fold in three times like you would a letter.
11. Cover with cling film and place in the fridge for at least 6 hours.
12. Take out the dough and roll it into a round circle which is about ¼ of an inch thick. Divide it into 16 triangles.
13. Roll each triangle from the longer side towards the shorter one to make croissants.
14. Put each croissant into the waffle machine and bake until golden brown.
15. Serve with toppings of choice.
Croffle Serving Ideas
For a delicious sweet snack, try some of the following serving ideas:
- fresh fruit: top your croffle with some fresh fruit for a vitamin-infused snack
- sweet jams: homemade jams are a great addition to homemade croffles
- peanut butter: to add some healthy fats to your croffle, serve with some peanut butter on top
- chocolate sauce: how can a sweet croffle go without some chocolate sauce? Spread some on top for an amazing dessert!

How To Store Leftover Croffles
For storage of any leftover baked croffles, you can use an airtight container and them at room temperature for about a day or in the refrigerator for up to three days. Just make sure to leave at room temperature a bit before serving.
For any long term storage, I recommend freezing the unbaked croissant dough and using it as premade croissant dough in the future. This can be done either with already formed croissants or just the dough itself.
If freezing croissants, it's best done in a silicone bag.
FAQ
Croissant rolls can be thawed the same way you would any other frozen premade food. Either in a microwave or oven under a defrost option or simply at room temperature for about an hour or two.
Yes, you can use store-bought puff pastry, roll it into a circle, cut into pieces and form croissants. Although it is not the best option, if you're out of time or motivation to make your own dough, store-bought puff pastry is a better option than store-bought frozen croissants.
To tell you the truth, croffles are not the healthiest food. But given that nutrition is all about balance it doesn't hurt to indulge in them every once in a while. And if you're serving them with some healthier options on the site you can even balance out some of the not so healthy effects of the croffle.
