Ingredients For Dairy-Free Sugar Cookies
To make these cookies, you will need the following ingredients:
- whole wheat flour: I like to use whole grain flour (in this case whole wheat flour) when possible when baking, but you can just as easily use any other purpose flour, gluten-free flour blend or flour mixture for these cookies
- coconut sugar: similarly, as the flour, my first choice in a sweetener for baking is coconut sugar. It does have a less sweet taste than regular sugar and also has a better nutritional profile. But if you are not interested in that, you can use any other solid sweetener of choice like brown sugar or birch sugar.
- peanut butter: instead of regular butter, for this dairy-free version, I use 100 % peanut butter. It not only adds the fat and energy to the cookies but some great protein and vitamins as well. Instead of peanut butter you can also use any other nut butter of choice. If you are not interested in these cookies being dairy free, then simply use real butter. You can also use vegan butter if you are not a fan of nut butters.
- egg: try and buy your eggs organic or from free-range chickens when possible. It is also advisable that prior to use, the egg is brought to room temperature.
- baking powder: a leavening agent that I use in almost all baking recipes, but you can use baking soda instead.
How To Make Chewy Sugar Cookies - Step By Step
Follow these simple steps for the best soft sugar cookies you can make:
- Preheat the oven to 180 degrees Celsius / 180 degrees Fahrenheit.
- Line a baking tray with parchment paper.
- Mix the wet ingredients in a large bowl.
- In a medium bowl mix the dry ingredients.
- Now bring all the ingredients together by adding the dry ingredients to the wet ones. You can do this either with your hands, a hand mixer, stand mixer or food processor. I find it best and easiest in a stand mixer.
- Using a cookie scoop or a spoon, take about 1.5 tablespoons of the mixture from the bowl and make dough balls. Place on the cookie sheet.
- Press and flatten the dough ball.
- Continue until you have used up all of your cookie mixture.
- Bake for about 10 - 12 minutes, until the edges turn golden brown.
- Transfer the cookies to a wire rack and let cool a little bit prior to serving.

You can also freeze already baked sugar cookies in a silicone bag and store up to 3 months in the freezer.
Before serving, make sure to thaw either at room temperature, or on a defrost option in the microwave or oven.

Of course. I usually don't add icing because I like to avoid excessive sugar and truthfully, I sometimes don't have the patience for icing. But you can add some royal icing with a piping bag. Even some food coloring to get some extra special colors on your cookies.
These can also be vegan sugar cookies by omitting the egg. Instead of the egg you can use one flax egg. Just mix one tablespoon of flaxseed with about 3 tablespoons of water and let sit for 5 minutes before using.
Yes! The best way would be to scoop your dough balls and put in a muffin tin that you have previously line with some plastic wrap. Then once the dough is frozen, just transfer to a silicone bag. If you have a big enough freezer you don't have to use the muffin tin but a regular baking tray.
