Healthy Banana Peanut Butter Cookies

Cookie recipes might be on top of your recipe list once you get kids. Not only are they pretty easy to make but they make a great and versatile meal. Whether you want to serve them for breakfast, as a snack or healthy desserts, cookies are always a good idea. So naturally you'd want them to be healthy cookies, right? I know I do.

Cookies in our household are a number one sweet. I don't know what it is with kids and cookies but I would bet on the texture. Chewy cookies are something you can not turn your head from. And kids either.

So for anyone with a little sweet tooth but wanting to keep it healthy, this easy cookie recipe should come to the top of the list. Bonus, they are also gluten-free cookies!

Easy Peanut Butter Banana Oatmeal Cookies Ingredients

To make these delicious banana oatmeal peanut butter cookies, you will need the following ingredients:

  • bananas: make sure your bananas are overripe or at least ripe. This will add the sweetness to your cookies and no additional sweeteners would be needed.
  • peanut butter: I love peanut butter in cookies because it somehow provides the best chewy texture to the end product. And hence the use of natural creamy peanut butter.
  • quick-cooking oats: also knows as quick oats or rolled oats, I have found these to be the best option for nut-butter cookies
  • salt: I tend to use Himalayan salt in my recipes, especially desserts but sea salt can also be a good option

Follow these simple steps if you're making these easy oat peanut butter banana cookies for the first time:

1. Preheat the oven to 180°C/360°F.

2. Line a baking tray with parchment paper or a cookie sheet.

3. Peel the overripe bananas and mash them with a fork.

4. Put the mashed banana into a large mixing bowl and add the peanut butter.

5. In a separate mixing bowl, combine the dry ingredients (quick oats and salt).

6. Add the dry ingredients to the wet ingredients and mix with a rubber spatula or whisker until you have a smooth cookie dough.

7. Take one tablespoon of the cookie dough and make balls in between the palms of your hand.

8. Put them on the prepared baking sheet and gently press with the palm of your hand.

9. Bake for about 10 minutes until golden brown on the edges.

10. Allow to cool before serving.

Top tip: Use cookie scoop if you have one to make it easier to have cookies of the same size

Peanut Butter Oatmeal Cookies Ingredient Alternatives

If you don't have some of the ingredients or you have some aversions to them, you can easily switch them with some alternatives:

  • peanut butter: instead of using smooth regular peanut butter, you can also try crunchy peanut butter or some different nut butters like cashew butter. Even seed butters like sunflower seed butter are a great alternative.
  • quick oats: I feel quick oats really are the best option for this recipe, but old fashioned oats or oat flour can be a good enough alternative
  • bananas: bananas add to the sweetness of this healthy treat as well as the texture but if you don't have them at home you can use alternative sweeteners like coconut sugar or maple syrup

Naturally-Sweetened Peanut Butter Banana Oatmeal Cookies Add-in Ideas

If you want to try some different flavors to these healthier cookies, here is a list of some of your favorite add-ins:

  • dark chocolate chips: this is a kid-favorite add-in. Just add some chocolate chunks to the cookie dough at the end before you start to shape the cookies
  • chia seeds: if you want to add some extra nutritional value to your cookies, you can add some chia seeds to the cookie dought for a perfect healthy snack
  • dried fruit: raisins or cranberries are a great way to add extra sweetness and fiber and truly make them the healthiest cookies you can make

Peanut Butter Cookies Storage

In case you want to make these cookies ahead of time and store them for future use, you can do both in the fridge and freezer.

For fridge storage, put the cookies into an airtight container and leave in the fridge for up to 7 days.

If storing in the freezer, then a silicone freezer stash bags are a better option and you can keep them in the freezer for up to 6 months.

What kind of Peanut Butter Do You Use For Peanut Butter Cookies?

I prefer to use natural smooth peanut butter and I usually make it myself. If you want you can also use crunchy peanut butter or store-bought peanut butter. Just make sure it has no added palm oil or salt.

I Only Have Underripe Bananas, Can I Still Make These Cookies?

Yes, but these cookies want be as sweet as they would be with overripe bananas. To add some sweetness you can add a couple of tablespoons of coconut sugar or maple syrup.

Do I Need To Use The Salt To Make The Peanut Butter Banana Cookies?

No, but a pinch of salt is great to add to desserts and sweet meals because it enhances the flavor of all the other ingredients. You might think you cannot notice the difference but trust me, it is there.
