Soft And Chewy Dairy Free Sugar Cookies Recipe

There dairy free sugar cookies are ideal for anyone trying to limit or avoid dairy. They're soft, chewy and super easy to make!

Ingredients

Dry Ingredients

  • 1 cup coconut sugar
  • 2 cups whole wheat flour
  • ½ teaspoon salt
  • 1 teaspoon baking powder

Wet Ingredients

  • 1 cup peanut butter
  • 1 egg
  • 1 teaspoon vanilla extract optional

Instructions

  • Preheat the oven to 180℃ / 350℉.
  • Line a baking tray with parchment paper.  
  • Mix the wet ingredients in a large bowl. 
  • In a medium bowl mix the dry ingredients. 
  • Now bring all the ingredients together by adding the dry ingredients to the wet ones. You can do this either with your hands, a hand mixer, stand mixer or food processor. I find it best and easiest in a stand mixer. 
  • Using a cookie scoop or a spoon, take about 1.5 tablespoons of the mixture from the bowl and make dough balls. Place on the cookie sheet. 
  • Press and flatten the dough ball.
  • Continue until you have used up all of your cookie mixture.
  • Bake for about 10 - 12 minutes, until the edges turn golden brown. 
  • Transfer the cookies to a wire rack and let cool a little bit prior to serving.
