What is Veganuary?
Veganuary is a non-profit organization that was started in England in 2014. The goal of the organization is to encourage people globally to go vegan in January and beyond. In 2022 they had over 600k people join their Veganuary challenge and where they became vegan for a full month.
The benefits of a vegan diet are widespread, and even if you are just doing this for a challenge and will always want to eat meat or dairy, it is a great way to introduce yourself to easy vegan recipes and meal ideas that you can eat everyday. Ones that your kids will love to.
Here you will find a list of easy vegan recipes for breakfast, lunch and dinner, some healthy veganuary snacks, and of course dessert, because vegan baking is actually awesome.
Vegan Breakfast Ideas
1. Chocolate Protein Pancakes
These pancakes are the absolute best!
They are high in protein, eggless yet fluffy, healthy, filling, and delicious!
And this is a great recipe for protein pancakes without banana for the chocolate lover.
You can make them ahead or right in the morning and freeze if necessary. They are a great way to start off your Veganuary.
2. Healthy Granola Recipe
One of my favorite recipes, this healthy granola recipe is full of 7 different plants.
And you know how they say that your gut microbiome depends on the variety of plants you consume? So this morning you can eat 7 different healthy plants.
Made with nuts (usually almonds and hazelnuts) but add any you want, flaxseeds, sunflower seeds, oats, and any sweetener of your choosing.
This homemade healthy granola smells incredible when baked, and tastes even better with some plant-based milk. Delicious vegan breakfast.
3. Raspberry Chia Pudding
Ok, I have to admit this isn't the easiest because of the wash up it may involve, but it is delicious, looks incredible and you also have 7 ingredients that you add to your diet to diversify your gut microbiome.
This Raspberry Chia Pudding recipe is vegan and gluten free yet loaded with antioxidants, fibre and high quality protein.
4. Fluffy Soy Milk Pancakes
Super easy vegan breakfast recipe, these Fluffy Soy Milk Pancakes can be made with white spelt or wholewheat flour.
They include soy milk, maple syrup, baking powder and vanilla extract mixed together and you have quick delicious pancakes that are also freezable.
5. Overnight Oats with Frozen Fruit
Overnight oats are a great way to have a healthy veganuary breakfast if you are in a rush in the morning.
You prep them the night before and you can place them in a container so you can eat them at work or at home.
This healthy Overnight Oats with Frozen fruit recipe uses chia seeds, cinnamon, yogurt and frozen berries, so it is super easy and a nutritious way to start your day.
6. Fluffy Vegan Protein Waffles (No Banana)
When it comes to naturally sweetening food banana is used almost everywhere.
So it is refreshing to discover such a delicious yet easy vegan breakfast recipe that also has lots of protein.
These Vegan Protein Waffles are made with all-purpose flour, plant-based protein flour, flaxseeds, almond milk, applesauce and vanilla extract.
You need need a waffle maker but this is a pretty good reason to buy one.
Easy Vegan Lunch and Dinner Recipes
1. Allergen-friendly Falafel
This easy to make falafel is made from chickpeas, onion, garlic and spices and takes about 20 minutes to prepare.
You can serve it with a side salad, some hummus, tzaztiki or baked sweet potato fries.
It is a great veganuary recipe for baby-led weaning, toddlers and the whole family.
2. Crispy Asian Tofu Buddha Bowl (Air Fryer)
Made with extra firm tofu, soy sauce, garlic, ginger, edamame, carrot, avocado and kale this buddha bowl is giving your body a variety of nutrients.
Served with brown rice it is also a meal you can make in advance and take to work.

3. Vegan Poke Bowl with Beets
A great option for a quick plant based lunch or dinner (yet it is still full of flavour).
Unlike most vegan poke bowls this doesn't include tofu.
But it does include roasted beets, avocado, cucumber, carrots and sriracha mayonnaise.
So you get a lot of vitamins and minerals with low effort which makes this recipe a great veganuary recipe.
4. Vegan Bolognese
This red lentil vegan bolognese with vegetables is one I make for us all the time during the winter months.
It does have a bit more prep to do with cutting the carrots, celery and mushrooms, but if you have a good food processor this is done in no time.
And my husband says is tastes almost like the real thing.
We make a big batch and freeze so we have an easy vegan dinner on a weekday when we want it.
5. Crispy Sweet Potato Patties
A Veganuary list would not be complete without a vegan burger - and this one is pretty good.
It is made with vitamin A rich sweet potatoes, quinoa and, white beans, herbs and spices and will make you fall in love with vegan burgers.
6. Tofu Salad with Cucumber
A healthy low carb lunch or dinner, this Tofu Salad with Cucumber is made with delicious crunchy tofu, cucumber, carrot, onion and fresh herbs and dressed in a honey vinegar.
Perfect to make the night before and take to work.
7. Healthy Vegan Baked Potato
A meal you will repeat, this warming baked potato is a stuffed with mushrooms and spinach and makes a tasty veganuary recipe.
About 15 minutes of prep and 1 hour in the oven.
8. Vegetarian Roasted Chickpea Gyros
A delicious recipe made with chickpeas roasted in cumin and spices and then placed in a warm pitta and covered with some plant-based yogurt dressing.
A perfect meal for you or for kids (especially if you have picky eaters).
9. The Best Vegan Red Lentil Sweet Potato Curry
A one pot recipe, this vegan red lentil sweet potato curry is a perfect example of plant based comfort food.
Made with lentils, tomatoes, sweet potato, garlic, ginger, peanut butter, lime juice and coconut milk and spices it is full of flavour and a recipe that you will repeat making.
10. Italian Cannellini Bean Salad with Tomatoes and Olives
A healthy salad for every day lunch or dinner and one you can make ahead of time.
It is super easy because it uses canned cannellini beans, you add some herbs, peppers, onions, tomatoes and vegan cheese and you have a delicious Italian salad which is a great dish for a Veganuary challenge.
11. Slow Cooked Vegan Miso Ramen Soup With Tofu
A heart, warming vegan miso ramen soup is a perfect easy vegan dinner recipe.
Slow cookers are incredible because you just pop all the ingredients in them, and then with a little bit of extra effort in a few hours you have an incredible meal.
12. Easy Pita Pizza 3 ways
Easy lunch recipe if you are in a rush - these pita pizzas were made with - you guessed it - wholewheat pittas instead of pizza dough.
With 3 toppings options, such as veggie pita pizza that is loaded with vegetables, or hummus pita pizza with avocado, mushrooms and peppers.
Or a spinach loaded roasted red pepper hummus pita pizza made with black olives, mushrooms, baby spinach and roasted red pepper hummus.
13. One pot Quinoa Tacos
A healthy, vegan and gluten-free recipe.
These quinoa tacos are made in one pot, take 5 minutes fo prep and less than 30 minutes to cook.
Made with black beans, quinoa, garlic, corn and spices they make a delicious weekday lunch or dinner.
14. Vegan Pad Thai
Everyone loves a good Pad Thai, usually it is served with chicken or prawns, but this Vegan Pad Thai will make you love vegan Thai food.
Made by stir-frying vegetables and then adding rice noodles, coconut milk and curry powder.

15. Easy Tofu Wraps
A quick dinner or great for on-the-go lunch these easy to make tofu wraps have a great balance of protein, carbs and fats.
You can make them in wholewheat or white flour wraps, fill them with crunchy lettuce, avocado, red peppers and fresh coriander.
Plus add a side salad and you have a super healthy lunch in under 20 minutes.
16. Vegan Efo Riro (Nigerian Spinach Stew)
A perfect stew for the cold winter months - this Vegan Efo Riro or Nigerian spinach stew is a hearty stew made with spinach, peppers, tomatoes, onions and it uses mushrooms instead of meat.
You can serve it with rice or on its own.
17. Spinach Avocado Pasta
A vegan pasta with a savory sauce made from avocados, spinach, garlic and walnuts.
You can make it with spaghetti or fettuccini (we prefer fettuccini) and top with cherry tomatoes, some vegan cheese and parsley.

2. 10 Min No-bake Energy Balls
What is great about this recipe is that it is very adaptable - you can use any mixed nuts and any nut butter as long as you get the amounts correct.
Made with oats, nuts, nut butter, flaxseeds and dates these no-bake energy balls are a perfect nutrient dense Veganuary snack.
3. Mango Pineapple Smoothie
Smoothies are a great way to get nutrients into your body in a fast way.
This mango pineapple smoothie has 4 ingredients, is creamy and vitamin rich and is a delicious breakfast or afternoon veganuary snack.
4. Detox Spinach Apple Smoothie with Lemon
If as part of your Veganuary challange you want to try and detox from the holidays, this recipe is for you.
Packed with vitamins and minerals, this smoothie is made with apple, spinach, cucumber and lemon. Perfect for an afternoon pick-me-up.
Vegan Desserts
Even though you may be going healthier this January that doesn't mean you dan't enjoy delicious vegan sweets. Here is our list of easy vegan desserts that will wow your family and friends.
1. Panna Cotta with Agar Agar
A healthy golden milk panna cotta is super easy to make by just whisking the spices and tiger nut milk in a small sauce pan. Wait to cool, pour and place in the fridge.
The result is a delicious vegan dessert that is creamy, yet is made without cream, yogurt or sugar.
2. Avocado Chocolate Mousse
Mouthewatering, smooth and creamy chocolate mousee with avocado is sweetened with dates and maple syrup only and not heavy cream or massive amounts of processed sugar. This is healthy, and will be a winner with family and friends.
3. No Bake Peanut Butter Fudge
Gluten free peanut butter fudge made with simple ingredients such as coconut oil, coconut sugar, peanut butter, maple syrup, vanilla extract and salt.

Fluffy and light these blueberry muffins only need 10 minutes to prepare.
Made with vegan egg, plant-base milk, flour and sugar they are your typical blueberry muffin but vegan.
These muffins freeze really well so they are a great dessert to make ahead and always have in the freezer.
5. Easy frozen Chocolate Banana Popsicles
Made just with nuts, dark chocolate and banana this is a super healthy veganuary snack or dessert.
Melt some chocolate, coat some frozen banana in it and top with chopped hazelnuts. Delicious and not too bad for you:)
