Preheat the oven to 220 C / 450 F and take a large baking sheet and cover with parchment paper.
Peel the carrots using a vegetable peeler and cut them into pinky finger length and width.
Place them in a large bowl and add the olive oil, crushed garlic, carrot fries seasonings and mix throughly with your clean hands so that each carrot stick is coated.
Line the carrot sticks on a baking tray in an even layer. These need to be in a single layer in order to have crispy carrot fries.
Place in the oven for 25 minutes. You can turn them midway. The cooking time will depend on your oven so you may want to bake them longer.
