My kids favorite are these oven baked carrot fries recipe. It is a crispy delight - great way to replace sweet potatoes or potatoes in your meals.

This is such a simple recipe that uses simple ingredients yet it is packed with vitamins and minerals 

  • carrots - carrots are a good source of beta carotene, potassium, vitamin K1, good source of fiber and antioxidants. You want to choose fresh firm carrots that can be cut into carrot sticks 
  • garlic cloves - antibacterial and antimicrobial properties. We use two fresh garlic cloves in this recipe. 
  • olive oil - heart healthy mono-saturated fats. Olive oil is the healthiest oil you can use when cooking or baking. It does have a lower smoke point but I always choose it due to its health benefits. 
  • seasoning - dried rosemary, dried paprika, salt and black pepper

How to make carrot fries

  1. Preheat the oven to 220 C / 450 F and take a large baking sheet and cover with parchment paper.
  2. Peel the carrots using a vegetable peeler and cut them into pinky finger length and width. 
  3. Place them in a large bowl and add the olive oil, crushed garlic, carrots, seasonings and mix throughly with your clean hands so that each carrot stick is coated. 
  4. Line the carrot sticks on a baking tray in an even layer. These need to be in a single layer in order to have crispy fries. 
  5. Place in the oven for 25 minutes. You can turn them midway.  The cooking time will depend on your oven so you may want to bake them longer. 

​Top tips: the main thing in order to get crispier fries is to place the carrot sticks in a single layer on your baking sheet. If the sticks are on on top of the other they won't bake enough to become crispy.

Substitutions & Variations 

You can use a variety of different spices and seasoning mix to make these delicious crispy baked carrot fries. 

  • garlic powder 
  • onion powder
  • cinnamon
  • dried thyme 
  • chilli flakes 
  • parmesan cheese
  • nutritional yeast 

You can also use avocado oil instead of olive oil.

​FAQ

Are carrot fries healthier than traditional fries?

Homemade carrot fries are healthier than traditional fries because carrots have far more vitamins, minerals and antioxidants than an conventional potato. Also making these carrots fries at home means you can season them with healthy seasonings and they are not coated in vegetable oil, preservatives or even sugar.

Can I leave the skin on the carrots?

Yes, you can leave the skin on, just make sure you wash the carrots thoroughly and then dry them. If the carrots are wet they won't crisp up.

Ingredients

  • 6 larger carrots
  • 2 tbsp olive oil
  • 2 garlic cloves (crushed)
  • 1 tsp dried rosemary

  • ¼ tsp black pepper
