Cut the chicken breast into ½ inch thickness and about 1 ½ inches in length.
Place the skinless chicken breasts in a large bowl and add the spices - olive oil, smoked paprika, oregano, salt and lemon juice and mix so all of the chicken is seasoned.
Heat a grill pan on medium-high heat with a tablespoon of olive oil.
Add the chicken breast and grill for about 5 minutes per side (or when you cut through the thickest piece it is white and cooked through).
Remove from the grill pan onto a plate.
For the dressing
Use a garlic crusher to crush the garlic and place in a small bowl or cup
Add the olive oil, lemon juice, dijon mustard and mix with a spoon.
For the spinach chicken wrap assembly
Take your spinach or flour wrap and place it on a plate.
Use a teaspoon to spread the dressing on the bottom of the wrap.
Add a few pieces of the grilled skinless chicken breasts.
Top with a few cucumber slices, tomato slices, 3-4 pieces of red onion and fresh spinach.
Use a teaspoon to drizzle more dressing on top and some black pepper.
Fold and enjoy your delicious chicken wrap with spinach.
