Ingredients

Dry Ingredients

  • 1 cup whole wheat flour
  • 1 cup purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon oregano
  • ½ teaspoon basil
  • ½ teaspoon salt

Wet Ingredients

  • 2 eggs
  • ½ cup olive oil
  • ½ cup yogurt
  • 2 carrots grated
  • ½ cup Mozzarella cheese
  • 2 tablespoon Parmesan cheese

Instructions

  • Preheat the oven to 180℃ or 350℉. 
  • Beat the eggs and add them to a large mixing bowl. 
  • Add the grated carrot, mozzarella cheese, parmesan cheese, yogurt and olive oil to the eggs. 
  • In a separate bowl, mix all of the dry ingredients together. 
  • Join the wet and dry ingredients and whisk them until you get a muffin batter. 
  • Fill each muffin liner with the pizza batter until it is ¾ filled. 
  • Bake for 20 minutes. 
  • Allow to settle for about a minute before taking out of the muffin tin. 
  • Let it fully cool before serving.
