Dry Ingredients
- 1 cup whole wheat flour
- 1 cup purpose flour
- 1 teaspoon baking powder
- ½ teaspoon oregano
- ½ teaspoon basil
- ½ teaspoon salt
Wet Ingredients
- 2 eggs
- ½ cup olive oil
- ½ cup yogurt
- 2 carrots grated
- ½ cup Mozzarella cheese
- 2 tablespoon Parmesan cheese
Preheat the oven to 180℃ or 350℉.
Beat the eggs and add them to a large mixing bowl.
Add the grated carrot, mozzarella cheese, parmesan cheese, yogurt and olive oil to the eggs.
In a separate bowl, mix all of the dry ingredients together.
Join the wet and dry ingredients and whisk them until you get a muffin batter.
Fill each muffin liner with the pizza batter until it is ¾ filled.
Bake for 20 minutes.
Allow to settle for about a minute before taking out of the muffin tin.
Let it fully cool before serving.
