How To Make This Recipe - Step by Step

To make these cheese pizza muffins, follow these simple steps: 

  1. Preheat the oven to 180 C or 350 F.
  2. Beat the eggs and add them to a large bowl.
  3. Add the grated carrot, mozzarella cheese, parmesan cheese, yogurt, and olive oil to the eggs.
  4. In a separate bowl, mix all of the dry ingredients together.
  5. Combine the wet and dry ingredients, whisking them until you get a muffin batter.
  6. Fill each muffin liner with the pizza batter until ¾ filled.
  7. Bake for 20 minutes.
  8. Allow settling for about a minute before taking out of the muffin tin.

​To really get the best taste, pizza muffins are best served warm. Make sure they're not too hot from the oven but also not fully cooled down to room temperature. 

Can I Add Meat To These Pizza Muffins? 

Of course. I try not to add ham, pepperoni, italian sausage or smoked meat because it does contain a lot of salt and additives but if you want to enhance the taste of your muffins, feel free to add some to your liking. 

Are Pizza Muffins A Good School Snack?

They most certainly are. They are a great addition to a lunch box but also an easy dinner for the whole family to enjoy.

  • Silicone 6 Muffin Pan

Ingredients

Dry Ingredients

  • 1 cup whole wheat flour
  • 1 cup purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon oregano
  • ½ teaspoon basil
  • ½ teaspoon salt

Wet Ingredients

  • 2 eggs
  • ½ cup olive oil
  • ½ cup yogurt
  • 2 carrots grated
  • ½ cup Mozzarella cheese
  • 2 tablespoon Parmesan cheese

Instructions
