Easy Cheese & Egg Quesadilla

Ok, I am admitting, this is my husband's recipe but it is sooooo good and yet so simple. And it is so easy that sometimes I wonder if it even is a recipe.

My 3 year old absolutely loves it and it is perfect for breakfast, lunch or even dinner – especially when you need something quick or are running out of ingredients in the fridge!

Perfect for baby, toddler and perfect for adults.

(We also use this recipe when playing the foods that start with e game),

Serve with some fruit for breakfast or with a salad of cucumber, peppers and tomato for lunch and dinner.

And it is made with 3 simple ingredients – wholewheat tortilla, egg, and shredded goat's cheese.

In case of egg allergy or if you don't want to eat eggs then you can try this quesadilla with cheese recipe.

Nutrition and Ingredients

Wholewheat Tortilla

  • Make your own or look for ones with minimal ingredients (should mainly be flour, water, salt)
  • Wholewheat flour is healthier than white flour due to them being a better source of fiber and vitamins and minerals
  • Contain folate, riboflavin, vitamin B1, B2 and B3
  • I buy a big batch of wholewheat tortillas and them keep them in the freezer so I always have some on hand

Eggs

  • Buy organic or free-range so you can be sure that the chickens have had the best possible diet and have not been treated with any hormones or antibiotics
  • Great protein source
  • B vitamins and choline

Goat's Cheese

  • Since all of my family is pretty intolerant to cow's milk products we use goat's or sheep's cheese whenever we need cheese in a recipe (however you could make this recipe with any shredded hard cheese you have at home)
  • Contains calcium, phosphorus, copper, B vitamins and some iron
  • Source of protein and fats

When Can I Give This To My Child?

Due to the sodium content in the cheese / tortilla, I would not give this to a child under 1. However, if you are confident that their daily sodium intake is going to be less than 1g of salt a day (less than 0.4g sodium), then you can serve this for babies 6 months+.

How to Make a Perfect Cheese & Egg Quesadilla?

Heat the tortilla on the pan. Turn the pan on to high heat and heat the tortilla for about a minute. Then flip the tortilla over and turn to medium heat. You shouldn't need any oil here, especially if you have a non-stick pan.

Crack the egg in a cup and whisk it with a fork. Sprinkle some cheese around the outer edge of the tortilla so that the egg doesn't spill over the edge, then pour the egg into the middle and spread around the tortilla with your spatula. Then place a lid on the pan and let your egg cook for about 3 - 5 min. It can help to put a couple drops of water on the surface of the pan (not on the tortilla) so that the steam helps to cook the egg.

Sprinkle leftover cheese and fold the tortilla. Once the egg is almost fully cooked, remove the lid and sprinkle the rest of the cheese on top. Fold the tortilla in half and cook for about half a minute on each side so the cheese is nicely melted inside.

Cut it up into triangles and serve with some fruit for breakfast or a cucumber, peppers and tomato salad for lunch.

Possible Recipe Variations

Add some vegetables. You can add some finely chopped up garlic, onion, peppers and spinach to the whisked egg before placing the mixture on the tortilla. This doesn't really work for picky eaters but may for your child.

Make it dairy-free. This recipe is good as it is without the cheese so you can just omit it or use vegan cheese if you need it to be dairy free.
