Smoked Salmon Recipes
Smoked salmon is one of the best ingredients to have at home. Not only is it full of healthy fats, omega-3 fatty acids and energy but it is also a versatile ingredient that you can use in almost any dish.
One of the things I love most about it is the fact that you can just buy it, store in the fridge and then use by simply opening the package and no further actions required.
Difference Between Salmon and Smoked Salmon?
(Raw) salmon is exactly that. It's the one that's been caught in the sea and then sold either fresh or frozen. It needs thermal processing such as cooking, grilling or baking before eating.
Salmon can also be smoked in different ways. But the most common one and the one that you buy in plastic packages in stores is cold-smoked salmon.
That type has been dry-cured in a large amount of salt for a number of days. The dry-curing draws out the moisture and afterwards it is smoked in temperatures below 30 degrees Celsius / 80 Fahrenheit.
Salmon can also be hot smoked. Instead of dry-curing the fish is soaked in salty water and then smoked in temperatures above 50 degrees Celsius / 120 Fahrenheit.
How To Smoke Salmon at Home
I've never smoked salmon at home because I just find it easier to buy at a supermarket, but if you have the time, energy and enthusiasm, here's a few tips I've researched on how to smoke salmon at home:
- place it in a plastic container with brine ingredients: water, sugar and salt - cover and refrigerate
- curing in the refrigerator lasts between 4 and 8 hours, depending on the size
- take the fish out of the container, rinse it and leave to dry for a few hours
- oil the skin and place it in a smoker
- smoke for a couple of hours (usually 4)
- allow to cool a bit before placing in the fridge where it can stay between 2 - 3 weeeks or in the freezer for up to 6 months - these stasher bags are perfect for it
- wood for smoking salmon can be pretty much anything except for pine
