Ok, so I know everyone is talking about the chia pudding. But let's just take a step back and think about what else we can make into a pudding - like flax seeds. Now, this is a simple recipe for a flaxseed pudding and we love it because you get the nutritious powerhouse of whole flaxseeds and you can use a variety of ingredients to make a delicious pudding.

Ingredients

  • Whole Flaxseeds: These tiny seeds are rich in omega-3 fatty acids, fiber, and lignans, offering various health benefits, including lower blood pressure.
  • Milk: Use your favorite type of dairy milk or plant-based milk. For this recipe we use unsweetened almond milk. 
  • Vanilla Extract: A dash of vanilla extract adds a subtle sweetness and flavor. 
  • Blueberries: Bursting with antioxidants, blueberries not only add a pop of color but also contribute to the pudding's nutritional value. The are also a fruit on the lower carb end which makes this a great keto breakfast recipe. 
  • Peanut Butter: Two teaspoons of peanut butter offer a rich and nutty flavor that makes it less likely you will need extra sweetener. 
  • Optional Honey: In case you need more sweetness in this healthy breakfast recipe. Only for children over 1 year old. 

How to Make This Flaxseed Pudding

  1. In a mixing bowl or mason jar, combine whole flaxseeds and milk, ensuring thorough stirring to prevent clumping.
  2. Add vanilla extract and stir to incorporate.
  3. Refrigerate the mixture overnight for a pudding-like consistency.
  4. Once you remove from the fridge give it a good stir it to get a creamy texture. 
  5. Top with honey and blueberries, and a dollop of peanut butter. Stir gently before serving.

Additions

Any ingredients you want to add you can add after you remove the flax pudding from the fridge as otherwise they may impact the ratio of whole flax seeds to milk.

You can top the flax pudding with any of your favorite toppings such as:

  • fresh berries or fresh fruit 
  • nut butters 
  • chopped nuts 
  • dates or prunes 
  • homemade no sugar granola 
  • coconut flakes
  • goji berries 
  • hemp seeds
  • cinnamon 
  • cocoa powder for a chocolate pudding 
  • ripe banana
  • you can use yogurt instead of milk, and even flavored yogurts such as blueberry yogurt, banana yogurt, strawberry yogurt or mango yogurt

Variations

  • You can use different milks such as soy milk, cashew milk, coconut milk, even homemade vanilla milk, banana milk or strawberry milk
  • You can use a different sweetener such as agave syrup, maple syrup

Storage

  • Store leftovers in an airtight container in the refrigerator for up to three days.
  • Does not freeze well 

FAQ

Can I use pre-ground flaxseeds instead of whole flaxseeds?

While whole flaxseeds provide a nuttier flavor, pre-ground flaxseeds or flax meal can be used for convenience. Ensure to adjust the quantity for the desired consistency.

Can I make this pudding with whole chia seeds instead?
