Easy Coconut Shake Recipe

Refreshing coconut shake made with coconut milk, coconut flakes, vanilla ice cream, honey and ice.

Coconut shakes are very common in Thailand and other parts of Asia. It is not sugar free but sometimes it is a delicious way to eat nutritious coconut on a hot summers day.

Ingredients

This is not the healthiest milkshake in the world, but some days you just need that.

  • Coconut milk - you want full fat coconut milk for the creaminess
  • Coconut flakes - strangely bigger flakes blend better than the tiny ones. Toasted ones will give more flavor but untoasted are also fine. A less powerful blender will have small chunks of the flakes. If you have a Vitamix use it for this recipe.
  • Vanilla ice cream - makes a creamy sweet coconut shake
  • Ice - makes the coconut milkshake nice and creamy. You want to add half the amount as coconut milk.
  • Honey or other sweetener - optional in case you want it sweeter.

How to make a coconut shake?

Super easy.

  1. Place all the ingredients except ice in a blender and blend. Add ice little by little until you reach your desired consistency.
  2. Transfer to a fancy cup and add an umbrella.

Variations

  • omit the vanilla ice cream and make it less sugary
  • you can use low fat coconut milk but then the shake will be watery. But this may be how you like it.
  • can be made with other plant based milks such as soy, oat or almond. It won't taste as coconutty but will still be good

FAQ

Are coconut shakes healthy?

Not really, they contain a large amount of sugar from the ice cream and they are high in saturated fat. However, they can be great to enjoy once in a while.

How many calories in a coconut shake?

It has about 600 calories, high in saturated fats and sugar.

Can I give this to my kids?

Children can eat all the ingredients in this coconut milkshake however halve the serving and only give this to them once in a while due to the high sugar and saturated fat content.
